TWD: Rice Pudding

Rice pudding... the sound of those 2 words together somehow grosses me out a little. Maybe it's because I'm used to eating rice in a non dessert way or because boiled milk isn't something I really like and the whole milk, sugar, rice combination, well... that's pushing me a little into the nervousness territory. Even with bread pudding, it took me a while to get used to the thought of sweet milk soaked into bread. If that's not bad enough, I'm a dry cereal eater.. I just can't mix milk with anything! Something must be wrong with me.. haha.

Why so many spoon shots? Well, I was trying my best to hide my rice soup. It was totally my fault for not using arborio rice and replacing it with brown. As much as I would love to buy an entire bag of arborio rice to use 1/4 cup of it (and I wouldn't considering I halved this recipe), I decided to go with brown. Plus, my other rice alternative was jasmine and you can imagine how gross that would've turned out, since jasmine rice does not hold its shape well through all that boiling. Out of all the desserts I've made, this one has definitely been the healthiest. A great source of fibre and calcium.. with no butter or any added fat, what can be better?! I'm so glad this was picked because I'm totally over my rice pudding fears.. I love rice pudding!!

  1. Oh yeah, that last picture looks like a morning bowl of rice cereal. Maybe some new health food type cereal. The spoon shots are gorgeous though!

  3. Indian cuisine has a few different versions of "milk soup." ;-) You could try Basmati rice next time. It will hold its shape very well.

  7. I know what you mean combining rice and pudding. I haven't fooled with brown rice that much but it seems that it's a totally different method cooking brown compared to white rice. Instead of using aborio rice which is pricey, could you have used regular white rice?

  8. I'm so glad to know that brown rice works in rice pudding. I figured it might, since my daughter uses that for her risotto a lot of times. And good for you to try the recipe even though it did NOT appeal to you - and to find that you now like it!! TWD is so great that way.

    I'm there with ya on not liking dry cereal...there is something about the milk at the bottom of the bowl that really grosses me out (and I thought that I was the only one!)

  15. I think it looks good and I love that you used brown rice. I actually like to eat leftover rice with cinnamon and milk anyway for breakfast. That is funny about the bread pudding comment too. I made it for the first time last year and my husband thought the name was so gross, he liked the actual food though. I think yours looks delicious!

  16. Yay -- a happy ending! I think rice pudding might be an acquired taste (or at least an acquired texture). If not for TWD, I would never have tried this, and would have never been pleasantly surprised. Yours looks great -- nice spoon pictures!

    Steph, it looks GREAT!!! So much better than mine! Did you keep on stirring it? It was our fault to try brown rice, next time we've gotta make sure it's glutinous! I learnt that from my gramma's asian version ;-) No milk involved in cooking hers, just water & sugar. And then coconut milk to complete the transaction!

  20. Trader Joes has one of the better prices for arborio if you ever want to make risotto. I think it is too expensive for rice pudding though. I like that you used brown rice. As far as bread pudding...love it. I add white chocolate and make a rasberry sauce. And your photos are so nice. Glad you enjoyed the humor, I was thinking 'Wow, this is pathetic, I used to be on dates with hot guys'. Oh well the hot guys are older now and are starting to lose their right into their ears. Ewww.   21. I totally almost made this with brown rice. Or quinoa. Luckily, arborio rice is in the bulk section at my grocery, so I didn't have to worry. I'd sorta like the texture of a firmer rice grain though, so maybe I'll try your way, reducing the amount of milk.

  24. Ya know Steph, soup IS a comfort food. Wish I could have tried, but....

    Anyway, wanted to tell you about the PB cupcakes. I didn't find any difference in the texture between convection and regular oven. Just a little shorter baking time.

  25. I don't put milk in my cereal either!! Everyone makes fun of me for that. Sorry your pudding became soup, but at least you tried it. I couldn't afford arborio rice, so I didn't bother subbing.
