TWD: Corn Muffins

I made these muffins right after I found out our TWD schedule even though I didn't have any of the add-ins so I could use my new pan! I've never had corn or undessert-like muffins before so I wasn't sure what to expect. These were rough, gritty and dry, kind of tasteless except with a hit of canned corn flavour. It was my fault for omitting all the 'savoury' components though..kind of like like cooking without spices, but I still didn't enjoy the pebbly texture. I tried to like them though, eating 7 of my mini rock like muffins to prove it because I feel bad for not eating the bad stuff... everything deserves attention, right?!

Flip them around and now we have mini muffins! Isn't it great when there are 2 uses for the same pan, what a great value.. haha.

  1. I'm so sorry you didn't like these! But I had the same experience with making the TWD pumpkin muffins in a "cute" pan ... everyone else raved about them except me. Maybe small muffins aren't as good as big ones? Though I want, want, want this pan. Williams-Sonoma?

    If you don't want to eat these, I think you should put some varnish on these, pile them in a basket, and use them as permanent table decoration. They're GORGEOUS!

  3. Cute! With more sugar as Dorie suggests in the side note, these are WONDERFUL!! I imagine they would be bland without the add-ins.

  4. Sorry you didn't love these, Steph. I am thinking that maybe the corniest corn muffins are the way to go when you are going plain, and this recipe benefits from the add-ins. Oh well -- it was a great chance to test-drive that new pan, and they look adorable!

  6. Cornmeal is definitely an acquired taste because of the "grittiness." My mom and brother don't like them, but my dad and I do. I used frozen sweet corn because I hate canned corn. Don't know if that would make enough difference for you to like them?? Oh well. There's always the berry cake next week! (which I'm skipping out on, btw. Too cheap to buy fresh berries this time of year.)

  10. Aww how dinky and cute! The heart and rose shapes are my favourites. Sorry to read you didnt like them though :( Still, I think the great pan makes up for it!

  17. Well at least you found out that the pan ROCKS! And the rocks - er, muffins - don't...
    There are a million recipes that will taste delicious in that pan, no doubt. I got this ridiculous pan for tiny kugelhopf shaped cakes that I've got to test out sometime soon.
