TWD: Classic Banana Bundt Cake

The best part about bundt cakes is you never really have to decorate them because they're so pretty by themselves... that is, unless if they stick because then you have something that's a little tricky to fix. This was the first time I've ever had a cake stick on me. I knew something was wrong when the cake wouldn't budge as I was wiggling the pan around before turning it over. This was actually a pretty scary moment because the thought of having to dig my fingers down the sides and try to pry it out didn't sound too fun. Luckily, with enough shaking and jiggling around, the cake was loose enough so that I could turn it upside down. A few pieces remained stuck on the pan, but at least it came out in one piece!

This was really moist and so tender that it literally melted in my mouth. I had to retoast it because it was a little mushy. The banana flavour was good, but not as strong as I would have liked. I wish I loved this as much as everyone else seemed to on the P&Q, but I think I'm just not a banana cake person even though weirdly enough I love banana bread. I didn't like the banana cake recipes from Sky High or Chris Kimball either because they were also too sweet and a little mushy. I guess I'll just stick with banana bread, especially the Silver Palate recipe with its strong banana flavour and sturdy yet tender crumb. There's also less fat, which is always a plus!

  2. I don't know - I guess I just equated banana cake with banana bread, especially in this case. Mine wasn't "mushy" at all. Yours does look wonderful, so lucky you to avert the potential stickage!

  6. I'm with ya on the bundt cake thing, they are just good looking alone (and we don't like frosting anyways :)

    Plus, ever notice how the cake is more portable. You can eat it with you hands, and it's kinda ok :)

  7. Oh no, I hate it when it sticks! I buttered my pan excessively and only had tiny bits stick (I think from the chocolate chips). It's more important to have a recipe that you love and can go back to than to love everything we make in TWD!

  9. Mine also stuck a bit on a silcone bundt pan. Do you think the lighter flavour was because it used all white sugar? I found it sweeter than I'm used to.

  13. Looks great, even with the sticking. I don't think I've had banana cake before, but it sounds good!

    I hate it when bundts stick. I usually use a spatula to get down the sides when that happens.

  15. Bummer that you didn't like this as it looks good.

    My bundt sticking happened this weekend,too! I think the moister the cake the better you need to prep the pan. Luckily the bundt was so good not one even noticed the top or lack of!

  22. I was terrified of my mini bundts sticking to the pan and being a nightmare to get out, but fortunately it didn't happen. Looks like yours came out without too damage - it's gorgeous! Sorry it wasn't your favorite but at least you tried.

  24. Sorry you weren't too crazy about it. I wasn't either - I thought it was good, just not as good as everyone liked it, but I think I am not a banana cake person, either! It still looks great, though!

  29. I did this recipe a couple of months back and absolutely LOVED it. Definitely melt in your mouth. I didn't have any of the mushy issues - I'm always so interested in how the same recipe can turn out differently for each person!

  31. Mmm I agree, bundt cake looks gorgeous just on its own. Though they seem more likely to stick than other cakes because of all the crevices! I found that its best to let it cool in the pan before turning it out too though I don't really love leaving cakes to cool in their pans.

  32. I thought the cake tasted just like banana bread, so I'm surprised you weren't crazy about it. I did have a combination of sour cream and vanilla Greek yogurt though. Plus organic bananas bc all the regular bananas were too green and I wanted to bake the cake that same night.
