TWD: Coffee Crumb Muffins

I've missed baking along with all the TWDers!! Even though I don't like allspice, I just couldn't skip out on another week so taking inspiration from the coffee break muffins on the previous page, I replaced allspice with 2 tbsps of instant coffee.

I thought that instant coffee would just dissolve as long as there was liquid. Well, that certainly wasn't the case so I was left with specks of coffee. Always dissolve instant coffee with hot water or at least not cold milk!

I wasn't crazy about these (probably my fault for the coffee sub). The crunchy topping was definitely the highlight.. then again when isn't it? Thanks to Kayte of Grandma's Kitchen Table for choosing this recipe!

  2. They still look great - even though they weren't your favorite (or mine). The topping looks perfect. That instant coffee... it's so picky, wanting to be dissolved. :)

  3. It's not just you - I made the allspice version a few months back and I didn't like them at all. The texture was blech.

  5. Such pretty muffins! Sorry they didn't deliver in the taste department. Maybe a different spice like cinnamon or nutmeg would be good?

  19. You need to make these again with plain cinnamon and nutmeg! That is what I did and they tasted terrific!

  25. I know what you mean about not missing out. I've been slacking big time! Mainly bc I don't have the time and when I do, I bake something non-TWD related. Good muffins though!
