I thought I was going to have to skip this week's TWD, but then my mom came home with a case of Ataulfo mangoes. I'm not sure how long this case will last us because we inhale mangoes at our house! I made 1/3rd of the recipe even though I ended up with a little less than 1 cup of mangoes and baked in a mini loaf pan. The more mango the better, right?! I halved all the spices after I thirded them so the mangoes wouldn't get overpowered by ginger and cinnamon. I was surprised that I enjoyed this so much considering there was no butter and all the folding it took to distribute the mango in this thick batter. I thought for sure this would end up tough and chewy, but it was actually tender, dense and very moist. Maybe I was just being overly paranoid about the overmixing as usual! I love how I'm discovering that it's not always about trying to get the fluffiest cake. The only thing I wasn't crazy about was the cooked mangoes because they seemed to have lost their fresh mango flavour and was a little mushy.
Thanks to Kelly of Baking with the Boys for choosing this recipe, which can be found on her blog and here. Don't forget to visit the TWD Blogroll!
I've never had mango bread - this looks great!
ReplyDeleteLOVE LOVE LOVE your photography. Keep up the AWESOME job!!!
Thanks for commenting on my blog!
Whoa exclamation points. Guess I'm in a good mood. Maybe it's the mangoes...LOL
That looks amazing - you kept your mango dices in tact - how did you do that? Mine was complete "mush"... good, but mush. Looks very healthy, delicious and moist!
ReplyDeleteoh that looks delish!
ReplyDeleteI love mangos!!! Also loved this bread: delicious and easy to make, definetely a keeper!!
ReplyDeleteYou're right about the thick batter. I'm glad Dorie warned us because I would have been sure the cake would end up useful as an extra brick. Look how beautifully dispersed your mango pieces are! I cut mine very small, and they were mushy to begin with, so I had more of a carrot cake effect. Still delicious, though!
ReplyDeleteyour mom came home with a case of mangos? wow, lucky you. I would love to make some mango chutney.
ReplyDeleteI didn't know this weeks TWD was this cake; I've had that earmarked for months.
Looks like you liked it?
Wow, that's some chunky bread and it looks wonderful!
ReplyDeleteYummy! I can't tell this was a mini loaf. Yes, I wanted to eat the mango first and forget the bread stuff! :)
ReplyDeleteYou must have babied those little mango babies. They look perfectly diced. How did you do that? Great photo! plus mine stayed in the oven a little too long and the fruit showing on the top did the too done tango. oops The mango really does keep the bread/cake moist though doesn't it? I liked it and like you I love Mango's right out of the hand or some other fresh offering. Thanks for your kind words when you stopped by. You are so fun.

Your mini loaf looks delicious.
ReplyDeleteLove the picture... the chunks! WOW! ...and one can even see the mangoes's fibers! It looks amazing! Bravo, Steph!
ReplyDeleteThe batter was crazy thick. Your bread looks perfect, though, and I love all the big chunks of mango!
ReplyDeleteThe bread looks perfect. Great photos!
ReplyDeleteYum your mango bread looks great! I made this a while ago though I omitted the spices and added chocolate chips. I think I cut the mangoes smaller than you did, so while the mangoes did lose their fresh mango flavour, they were really yummy and buttery.
ReplyDeleteSo glad you were able to get some mangos to make this! It looks fantastic! I LOVED this recipe!
ReplyDeleteThat looks delicious with those mango chunks!
ReplyDeleteWell done, looks lovely!
ReplyDeleteYour loaf looks perfect! I LOVE your huge mango chunks! Maybe I'll keep mine bigger if I make this again.
ReplyDeleteI also ended up making this recipe cause my mom gave me mangos. :) And I agree - not a lot of mango flavor after baking. Still, I thought it was pretty good!
ReplyDeletejealous about your case of mangos, I love them, but not too sure about mushy cooked ones (I gave my loaves away). Hmmn, may have to try again to see - or just make mango margaritas!
ReplyDeleteYour mango bread looks fantastic! The huge chunks of mango are totally yum :)
ReplyDeletegreat photo. i enjoy fresh mango more too
ReplyDeleteI'm so glad that your mom came home with mangoes! This bread looks totally delicious. Great job. I completely agree: the more mango, the better. Yum!
ReplyDeleteI'm so jealous of your case of mangoes! This was my first week trying mango and I loved it. Your bread looks amazing and that photo is super terrific!
ReplyDeletethe batter was thick - definitely gave me a little workout. your bread looks sooo good. you know, i can't even really tell it's a mini size.
ReplyDeleteOh my gosh, you had such perfect mango pieces! Your bread looks like it could have been in Dorie's book. Awesome!
ReplyDeleteI diced my mango rather small, because I didn't think I'd like it.
ReplyDeleteYour mom ROCKS!! I need to start buying them by the case :) although I'd hate to make bread out of them, I'd just want to eat them all whole YUM!
ReplyDeleteYour large mango chunks are so bold - it looks really great!
ReplyDeleteOh wow, I would love a case of mangoes! This looks delicious.
ReplyDeleteGreat photo showing those beautiful chunks of mango! We loved this one, too.
ReplyDeleteWow, your bread looks absolutely gorgeous! I love the big mango chunks!
ReplyDeleteLove the idea of seeing the chunks of mangoes...great pictures. I am sure that taste really yummie.

Looks delicious, Steph! This sounds like the perfect quick bread for a mango-loving family like yours. We really enjoyed this one too.
ReplyDeleteWow, a case of mangos, what a treat! I went with the full spice dose and thought it was great. It is true that the mangos no longer have that bright freshness after being baked, but I thought it was fantastic! Beautiful loaf.
ReplyDeletewow, your loaf looks absolutely perfect! great job. our family is like yours--we inhale mangos. yum!
ReplyDeleteI wish I had a case of mangoes! The mini loaf looks great.
ReplyDeleteThat looks wonderful! Sorry you weren't a fan of the mushy cooked mangoes though.
ReplyDeleteBeautiful loaf with those huge hunks of mango. Sorry you didn't like it.
ReplyDeletewish i would have read yours and some of the other blogs as well. i just made this last night and was very excited to see how it would turn out. in reading the recipe, i thought to myself that the amt of spice seemed a lot but i usually like to try recipes as written first (esp from sources which I have respect for like Dorie's). Unfortunately, it tasted fine but like others. Just tasted like a spice bread and my fresh, sweet aromatic mangoes were no where to be found in the bread. The ginger and cinnamon killed it :(
ReplyDeleteWow Steph, your dessert pics always look blazing-amazing!
ReplyDeleteI added more mangoes into mine and it actually tasted decent. Better the next day, in fact. More or less, it was not a spectacular recipe, but I loved the texture. I might turn this into a banana bread loaf next time. ;)
