TWD: Mango Bread

I thought I was going to have to skip this week's TWD, but then my mom came home with a case of Ataulfo mangoes. I'm not sure how long this case will last us because we inhale mangoes at our house! I made 1/3rd of the recipe even though I ended up with a little less than 1 cup of mangoes and baked in a mini loaf pan. The more mango the better, right?! I halved all the spices after I thirded them so the mangoes wouldn't get overpowered by ginger and cinnamon. I was surprised that I enjoyed this so much considering there was no butter and all the folding it took to distribute the mango in this thick batter. I thought for sure this would end up tough and chewy, but it was actually tender, dense and very moist. Maybe I was just being overly paranoid about the overmixing as usual! I love how I'm discovering that it's not always about trying to get the fluffiest cake. The only thing I wasn't crazy about was the cooked mangoes because they seemed to have lost their fresh mango flavour and was a little mushy.

  2. That looks amazing - you kept your mango dices in tact - how did you do that? Mine was complete "mush"... good, but mush. Looks very healthy, delicious and moist!

  4. You're right about the thick batter. I'm glad Dorie warned us because I would have been sure the cake would end up useful as an extra brick. Look how beautifully dispersed your mango pieces are! I cut mine very small, and they were mushy to begin with, so I had more of a carrot cake effect. Still delicious, though!

  8. You must have babied those little mango babies. They look perfectly diced. How did you do that? Great photo! plus mine stayed in the oven a little too long and the fruit showing on the top did the too done tango. oops The mango really does keep the bread/cake moist though doesn't it? I liked it and like you I love Mango's right out of the hand or some other fresh offering. Thanks for your kind words when you stopped by. You are so fun.

  13. Yum your mango bread looks great! I made this a while ago though I omitted the spices and added chocolate chips. I think I cut the mangoes smaller than you did, so while the mangoes did lose their fresh mango flavour, they were really yummy and buttery.

  17. I also ended up making this recipe cause my mom gave me mangos. :) And I agree - not a lot of mango flavor after baking. Still, I thought it was pretty good!

  34. Wow, a case of mangos, what a treat! I went with the full spice dose and thought it was great. It is true that the mangos no longer have that bright freshness after being baked, but I thought it was fantastic! Beautiful loaf.

  39. wish i would have read yours and some of the other blogs as well. i just made this last night and was very excited to see how it would turn out. in reading the recipe, i thought to myself that the amt of spice seemed a lot but i usually like to try recipes as written first (esp from sources which I have respect for like Dorie's). Unfortunately, it tasted fine but like others. Just tasted like a spice bread and my fresh, sweet aromatic mangoes were no where to be found in the bread. The ginger and cinnamon killed it :(

    I added more mangoes into mine and it actually tasted decent. Better the next day, in fact. More or less, it was not a spectacular recipe, but I loved the texture. I might turn this into a banana bread loaf next time. ;)
