Banana Espresso Chocolate Chip Muffins

After seeing these muffins on Cassie's blog, I knew I had to make them except that I sort of didn't. When I bake, I usually start gathering stuff while the butter is being creamed. Even though this can lead to a little bit of scrambling, I feel like I'm saving time. Anyway, instead of measuring 1 1/2 cups of flour, I ended up measuring 2 cups by mistake. The baking soda and salt were already mixed in so I just went with it. Normally I wouldn't, but seeing as there was 1 1/2 cups of banana, there should be no dryness issues. I also creamed the butter so maybe these aren't really the Baked muffins anymore, but they were still good! The texture was definitely lighter than banana bread with the creaming. I think it would make a good banana cake because it was tender yet sturdy. The coffee wasn't strong, but it's probably because of the extra 1/2 cup of flour I added by mistake. I'll have to make the Baked version next time and premeasure instead of reading the ingredients off my laptop as the butter is being creamed.

Where did all the chocolate chips go?!

  1. It's great that your muffins survived your cooking style (only kidding!) - that's the sign of a true baker, probably! This sounds like a great flavor combination...one that I would, um, never have thought of. (In other words, if they start selling a banana macchiato at Sbucks, I'm not getting one.)

  2. Love the way you adapted it and perservered.. me I wouldve tossed it at my error.. I love love the sound of the flavors in this muffin and they are on my list of things to do!

  4. I suspect that the extra 1/2 cup of flower and some recipe shifting is exactly how new recipes and trends get created. It would be interesting to see the difference if you make them again and use the exact ingredients and methodology. Maybe you'll start a new craze and call it the disappearing chocolate chip muffin.

  11. Sounds like we have a very similar approach to baking.... LOL! They look great and I'll bet everyone thinks you are a well-prepared baker (unless you tell them otherwise!).

  12. I would've kept going too if I have done the same thing. Actually, I would have tried to compensate for the extra flour, but I guess that's where the banana came in, no?

    And the chocolate chips are missing because I ate them ;)

  16. I agree with the other steph... measuring within reason is overrated. You stuck the landing on these perfectly... yeah where did the chips go :) That's soooo not like a CCC lover!
