I don't exactly want to start off this post saying that I really didn't like these, but it's the truth. It's probably because I don't usually like spices so if you like zucchini and spices, you'll probably love these. I've gotten better though from TWD, but these were still too overpowering for me, especially since zucchini doesn't exactly taste like anything. I don't think frosting could have saved these so I left them as is.
I feel like I've been a little absent from blogging and havn't been commenting as much as I would love to, but right now everything feels a little bleh. I'm sure I'll get back into it because I can't ever imagine stopping with blogging or baking.

What? Not like zucchini and spice?! LOL I never thought about the fact that zucchini has no flavor - sort of like the potato I guess.... Even if you don't like the flavor - they look good.... as always!

I'm sorry your cupcake weren't to your liking...to be honest, I've never met a zucchini bread or muffin that I found wonderful, though I keep trying! I know what you mean about 'bleh'...but we'd miss you, so come back again soon!

ReplyDeleteI also was not the world's largest fan, zucchini totally bakes out so I added a ton of SPICE and made them a bit more spice cakey!!!

ReplyDeleteHey, it happens. I'm not fond of spice in cakes either. I don't generally like things like gingerbread cake or fruit cake because I'm just not into that flavor combo in my sweets.

I've been thinking about baking zucchini something lately...Guess it won't be these. I like spice, but I find ingredients like nutmeg and cloves can overpower a dish pretty quickly.

I thought they were muffin like too. Kind of like carrot cake only with zucc's so there ya go. They were moist and I think I would jazz them up in the muffin world if I was going to make them again.
