Custard, yum! Banana, yum! Pie crust, umm... I blame my dislike for pie crust on a scary chicken pot pie incident in grade 6 when we went on a 3 day trip at a wilderness lodge. Of course that crust is nothing compared to Dorie's and it wasn’t so much the crust that bothered me than the filling *shudders*, but for some reason I just can’t let it go. I didn't want a bunch of leftover egg whites so for every 2 yolks, I just used one egg, which worked but is probably not as rich. Here is my banana cream, which I hope is just as wonderfully delicious minus the crust and the whipped cream. There's nothing like a dusting of cinnamon sugar over bananas! (ok, so maybe it's not as delicious as whipped cream!!)

Sounds like quite a horrifying 6th grade experience. I hear you, though: traumatic childhood food experiences can really leave you scarred! This banana cream pie does look totally delicious, though! All three elements sound fabulous to me, and it looks like yours turned out just excellently!

ReplyDeleteYou know, I would make more pies myself if they didn't have crusts ... it's all about the filling, anyway. One of my projects for this spring is to find a perfect crustless quiche.

ReplyDeleteI've always been afraid to make traditional pie crust, but I did it and it actually came out pretty good. I'm still not a huge fan, and actually like the taste of graham cracker crust more, but Dorie's recipe is pretty easy.

ReplyDeleteWay to make it your own - I have to skip this week because my family has me working on their favorites, I can't generally eat pie crusts, this may be a good way to try it with soy cream.
ReplyDeleteThis looks delicious sans-crust, but I'm kind of sad to hear of your youthful pie crust trauma incident. Pie crust need not be scary -- for cream pies in particular, a pat-in-the-pan type recipe can really work very well and be very delicious!

Great idea! I think you got down to the essence of what this pie is all about - the bananas (which I thought could have benefited from a little cinnamon and sugar) and the custard. The crust and the whipped cream merely gets in the way.
