TWD: Four Star Chocolate Bread Pudding
Bread pudding isn't really my thing. Even when I try to upload my picture to blogger, it comes out rotated and I have no idea how to fix it. Whether its upright or not, it looks the same to me...not good. I made 1/6th of the recipe in a mini loaf pan and added less liquid after reading about the floating bread that some people were experiencing. I substituted cocoa powder for chocolate and used only milk instead of cream. So maybe cutting down on the richness doesn't make it 4 star anymore, but I'd rather save the calories for a cupcake! I really tried to like this, so much that I ate the entire top crust, but when it got to the soggy parts, I just had to stop. This is the first time I've had bread pudding so I'm not sure what the texture is supposed to be like or if I messed it up by using Dempster's bread, but I just can't get past the sogginess. I even made sure it was baked for a really long time, so long that the top was practically burnt and a toothpick inserted came out clean. It's a good thing that I only used 3 cups of liquid (1/2 cup for 1/6th of the recipe) or else I can't imagine what the pudding would look like...mush? I'm sure that this was a great recipe for those who enjoy bread pudding, but I'm not a bread pudding fan.

Yeah, I don't think this dessert will win most photogenic! :) Looks tasty though!
ReplyDeleteSo, Steph, how did you really feel?! Sorry it wasn't your cuppa, but at least you made a sixth of a recipe, so not a lot of waste. Next week's tart is really good. My tasters loved it, and I think it's one of Dorie's best.

ReplyDeleteI think there's probably a fine line between 'light and moist' and soggy. I'm sorry this wasn't your favorite...probably not mine either, if I have to pick my chocolate delivery vehicle! But it was fine to try, anyway, right?
Oh, and I'm not a photographer, but I think I figured out the rotate thing! Happens to me all the time. I sent you an email...didn't want to clog up your comments. I hope it helps!
sorry you didn't like the pudding. I didn't eat mine, so i am not too sure if i will like it. Anyway, at least we tried ;-)
ReplyDeleteI'm not a big bread pudding person either. It;s wierd, I love it when I'm eating it but not when I think of it. I wonder why blogger is messing up your picture, it looks kind of ecclectic like that tho.

ReplyDeleteYou probably needed a bread that was neither Dempters nor French loaf, something in between, to soak up the pudding. At least you had the experience. Good try!

ReplyDeleteI'm so sad tohear that somany peeps didn't really like this recipe becuse bread pudding is one of my FAVs. In case you want to try this again, the best bread to use is brioche, as it does a really good job of soaking the custard.
ReplyDeleteBread pudding is mushy no way to get around it. Adding a sauce or nuts helps a bit but it's still mush.

I grew up eating bread pudding with raisins and sauce and all that stuff. So, what can I say? And this was one was with C H O C O L A T E???

I'm sorry that your bread pudding wasn't all it was cracked up to be. Oh, well, now you know: save the cals for a cupcake :) I must say, though, the picture does have me quite hungry--I'm a fan of mushy, pudding cakes, so I might just be able to polish off your leftover pudding!

ReplyDeleteIt seems that a lot of TWD bakers have said that they just don't like bread pudding so you're not alone! This was my first time trying it too but I really enjoyed it!

ReplyDeleteWay to try it anyway. I liked it, but didn't LOVE it. Yep, not the prettiest photographs (everyone's--it's the dessert), no matter how you look at it.
ReplyDeletesorry to hear that you didn't like the bread pudding; i think that's an issue with baking something that we've never tried before! i've never made bread pudding before, either, so if i didn't like it, i wouldn't be sure if it's cause i: 1) messed it up or 2) just am not a big fan of the dish. still so proud of you for giving it a try, though! i usually try to bake things that i KNOW, as it's so daunting to try to create something that you've never had any experience with!

ReplyDeleteHa! You're SO right. Asian people DON'T like frosting. Whenever we buy cakes, we take photos, sing happy birthday, and then SCRAPE OFF THE FROSTING! i guess i was looking forward to doing the same thing! LOL. thanks for the reminder :)
About the apple scones.. no don't let the apples release their juice or anything. The recipe uses 1 Golden Delicious apple and I recommend you peel it. And you use a food processor to chop it into 1/4 inch pieces. If you want the actual recipe let me know.

ReplyDeleteI was raised on bread pudding and have to admit it is kind of an acquired taste; for many people don't like custardy desserts in the first place, it is only normal many don't like this either.
Strange though, although bread pudding is supposed to be a very moist dessert, it is not supposed to be soggy per say.
Oh! well I'm glad you at least tried the crust! lol lol

ReplyDeleteI don't do soggy at all (EW!) but have always liked bread pudding. For the most part it is moist but not wet and certainly not soggy. The one chocolate I've eaten actually tasted like and had the texture of a brownie.
